Delicious Stews You Can Make Without Fresh Tomatoes



Are we going to stop eating our staples because there are no fresh tomatoes in the market to make the stew?
When everything is working against man, he needs to device a means of survival.  Four pieces of Tomatoes is now sold for five hundred Naira and my question is how much tomatoes can make a pot of stew enough for a family of six.  How many families in Nigeria can afford this new trend of feeding the family?  The answer will get you scared and I don’t intend to give any figure.  

What I intend to do is to share a little experience on how you can make tasty and delicious stew without using the so called fresh tomatoes. 

My husband hosted a club meeting recently and I decided to put my experiment into action and the result was amazing.  Since we are to entertain them with rice and there are no fresh tomatoes and the available one is out of my budget, I have to use my experience and this is how I did it.

I used carrots (carrots are available now in the market, so use enough quantity about N300 because this determines the quantity of the stew), green peas ( any quantity is okay), green pepper, spring Onions, Cameroon pepper, Onions, ginger, curry and 2 sachets of Tomato puree.

I used chicken and fish (These did not increase so much, they are still within the normal price).

How to Make the Stew






After per-boiling your chicken to get the stock (The stock is the only water you will use, so make sure you have enough)

Start by heating the oil for a minute; add the sliced onions and the sachets of tomato puree.  Fry for about 2-3 minutes.  Do not over-fry, add the ginger and curry (frying the ginger a little bit brings out the aroma of the ginger) and finally add the chicken stock and the fish and allow to cook for 3 minutes.

Add your sliced carrot, green peas, green pepper, spring onions, Cameroon pepper one after the other.  These vegetables do not take much time so a minute is enough for them to be alright.  Add your cubes of magi and a little salt to taste.





The taste was wonderful as I got 5 stars from our guests.  It is also healthier and economical.

How to Make Egg Source without Frying It



The generally accepted method of making egg source is by frying. 

Even though this delicacy is very delicious and healthy to an extent, many people especially adults and those with health issues run away from it because of the frying that is involved.

In this post I am going to teach you how to make this healthy recipe without frying it.

Egg source unlike vegetable source is made from egg mixed with vegetables and fruits and it can be used to serve your staples like: noodles, bread, fried plantain, cooked unripe plantain, yam and even rice.

In Nigeria, those from the Middle Belt especially people from Benue State use it as a soup to savor their swallows.

Ingredients for 4 Servings:

·        Egg – 4 pieces
·        Tomatoes – 8 pieces
·        Fresh Pepper – 4 pieces
·        Onions – 1 bulb
·        Carrot, Green peas, Green Pepper, vegetables (optional)
·        Salt – a pint
·        Magi – 1 cube
·        Oil – 2 table spoons

To cook this recipe, just follow these simple steps:

Chop your Fresh Tomatoes, pepper, onions and other vegetables separately and keep them aside.

Set your pot or frying pan on fire and add about ¼ cup of water.  Allow to boil then add the two spoons of oil (those without cholesterol)

Add your chopped tomatoes, onions, pepper and other vegetable as desired.  Leave to boil for about 3 minutes.  Continue to stir to avoid it sticking to the pot.

Add the salt and one cube of magi to taste.


Beat the eggs with an egg mixer or with a fork or spoon and add it to the boiling source, allow it to cook for 2 minutes.


Mix everything with a spoon until you are satisfied with the texture you want.  Your delicious egg source is ready.

Serve with any staple of your choice.

Bean Cake (Akara) – A Good Breakfast Recipe

In addition to the good old bread and chocolate, coffee or tea bag drinks routinely taken in the morning as breakfasts before embarking on morning engagements, the bean cake is a quick and easy breakfast meal you can enjoy with your family.  I am sure it will help you start your day on a good note and avoid eating previous day’s leftovers. 




Breakfast meals are supposed to be quick and easy to prepare. They are usually something you can put together in an hour or less. Most Nigerians prefer going to canteens and fast food joints and end up eating meals that are not meant for breakfast.

Bean Cake is made from beans and can be used in so many ways i.e. Instead of bread, use Bean Cake (Akara) balls to drink your tea.  It is more nutritious and easy to prepare.  Take bean cake with Custard, Pap (Ogi or Akamu), you can take it with either fried Plantain or fried yam and a cup of tea or fruit juice. You can also eat it with bread and a cup of fruit drink.

How to Prepare Bean Cake (Akara)

You need only 5 ingredients:

·         Desired quantity of Beans (black-eyed or brown beans)

·         Pepper (Tatase & Orodo)

·         1 medium Onion

·         Salt to taste

·         Oil for frying

You will have to soak the beans in water for about 5 minutes.  This will enable you remove the coat easily, Grind it with an engine or with a blender or pound it with your mortar and pistol (Pounding it with mortar and pistol takes a lot of time but it gives a very good taste). Because you have an engagement to catch, I advise you have your already prepared bean flour handy.

1.    Set some vegetable or palm (red) oil on the fire to heat up. The oil should be at least 3 inches deep.

2.    Put some quantity of the grinded beans you will fry at once into a mortar and stir with the pestle continuously. This will energize the particles of the beans pulp and make them stick together.

3.    It is important you do not let salt come in contact with the grinded beans until you are ready to fry it, this prevents scattering of the beans puree during frying. Salt is believed to destroy the leavening property of beans.

4.    Add some water if the paste is too thick but remember that the watery the puree, the more it will scatter in the oil.  For you to get the best result always make sure the paste is not watery

5.    As soon as the oil becomes hot, add the chopped onions and pepper to the beans puree in the mortar add salt to your taste and stir well. Salt should always be added just before scooping the beans mixture into the oil. If salt stays in the mixture for extended periods of time, it will destroy the leavening property of the beans. This property is what makes the Akara float in the oil and prevent scattering during frying.

6.    Scoop the mixture with a spoon or any other measuring agent depending on the size you want and slowly place the puree into the oil. Try to dip the spoon a little bit into the oil to help reduce spattering.

7.    Fry from one side till brown and flip to fry the top side too.

8.    When the Akara balls are brown all over, remove and place in a sieve to drain any excess oil.

Getting a good result in making akara can be funny but if you follow this method, you will always have neat and well prepared balls.

How To Cook Delicious Beans Meal Your Family Will Like.

Beans, the plural of bean seed is an edible legume that has been proved to contain protein unlike rice and other staples.  But despite its protein content, many families do not like to eat or include it in their menu list.  So I tried to find out why people especially children do not like to eat beans despite its nutritional value and the fact that it is one of the healthiest food recipes a person can have.

In my investigation therefore, I was able to find out that the traditional method of cooking beans (putting it on the fire, adding oil, pepper and salt) is the reason why so many people hate eating beans.

The following method ofcooking beans will help you cook delicious beans your family will like:


Ingredients
·         Beans (One and half derica cups)
·         Vegetable or Red oil (any one you prefer)
·         1 Big Onions bulb (sliced)
·         4 Fresh Plum Tomatoes
·         Fresh Pepper (Orodo)
·         Crayfish   
·         Dry Fish
·         Salt - to taste
·         Seasoning – (2 cubes e.g. Magi)
·         Vegetable (optional)

Before You Start

-       Wash the Beans thoroughly and cook until soft then add some salt.  Bring it down and remove the water with sieve.

-       Slice the Onions.

-       Blend or pound the pepper, tomatoes and crayfish together.
